My son and I made Turkey Soup the two days following Thanksgiving. I had two turkeys just for this purpose (they were free with purchase of other food at the market). I ended up with 56 pints of the most wonderful soup! I have been down with a cold this week and have this soup to give me comfort as I work my way back to good health.
If anyone is interested in how this soup was made, just post a comment and I will share how we made it.

I'm feeling great now! I will post the soup recipe Dec. 16. What have you canned? I'm always looking for good recipes! You might want to take a look at our previous blog, listed on the side-bar--"Our Previous Emergency Blog" for several canning recipes. We put on two canning seminars last summer and I posted a lot of recipes we were sharing with the seminar attendees. If you haven't been to "Creative Canning", also on the side-bar, you must see it! She has some terrific meals-in-a-jar, several of which I have made.

ReplyDeleteI have been to "Creative Canning" site. She has openned up the world of canning. Canned her Cajun sausage, and the coleslaw recipe is terrific! Also own Jackie Clays new canning book. Very good.
I've canned this year: Chicken, Ham, Beef, salsa, pickles(several kinds),
butter, cheese whiz, peaches, pineapple, blueberry's, chili,taco meat, beef stew, soups-bean, chicken, barley. Apple pie filling, blueberry buckle, syrups.
Next: Turkey! (thanks for the recipie). Hamburger meat, meatballs. Will try potatoes soon too.
Canning is work but it is so rewarding. To look at and to eat. :)

Penny, you are a Canning Star! "Creative Canning" also opened up the world of canning to me! I realized that I could can anything I cook--if it has any kind of meat, it goes is pressure cooked for 90 minutes. On our previous emergency prep blog we have Bill's Italian Meatballs (put "meatballs" in the Google box up in the top left corner of the blog). He likes to brown his meatballs first. I will post my meatball recipe today--it is really easy and I have used them with my home canned spaghetti sauce. I have also canned Albondigas Soup, a Mexican soup with meatballs, that my husband loves. I have canned ground beef, but my husband doesn't like it--it comes out very fine, like the meat at the taco fast-food places. But, give it a try and see if you like it.
